INGREDIENTS:

For Cake
2/3 cup yogurt
3/4 cup milk
1+1/4 tsp baking powder
1/2+1/4 tsp baking soda
1.5 cup flour
1/2 cup cocoa powder
1+1/3 cup sugar
1/2 cup butter
1 tbsp coffee

For Fudge Ganache
1 cup fresh cream
1 cup chopped dark chocolate
2 tbsp butter
1/4 cup condensed milk

METHOD:

For the cake:

Step 1: Take the milk in a small bowl and add the curd, baking powder and baking soda to it. Stir it, and keep it aside.
Step 2: Take a large bowl and sift in the dry ingredients – flour, cocoa powder, and icing sugar. Mix them together evenly.
Step 3: Add the soft butter and mix well with the dry ingredients, using your fingertips, till all the dry ingredients are coated with butter.
Step 4: Pre-heat the oven at 160 degrees.
Step 5: Add in the frothy milk mixture and mix it well using a spatula. Gently whisk it to remove the lumps.
Step 6: Add some instant coffee to enhance the flavour.
Step 7: Transfer the cake batter into a well greased cake tin. Give it a pat to remove the air bubbles.
Step 8: Pop it in the oven for 30-35 minutes at 160°C.
Step 9: Take a skewer test to check if the cake if ready.
Step 10: Let the cake cool before taking it out of tin.

For the ganache:

Step 1: Chop the dark chocolate finely, and transfer it into a glass bowl.
Step 2: Place a pan over the stove on medium flame and add to it fresh cream, some butter and the condensed milk.
Step 3: Before it comes to a boil, switch off the heat and pour the mixture onto the chopped chocolate. Let it sit for 2 minutes.
Step 4: Mix it well and refrigerate it for 2 hours.

Decorating the cake:

Step 1: Put a little chocolate ganache on the cake stand so the cake does not shift while decorating.
Step 2: Place the cake and layer it with chocolate ganache. Flip the top layer and place it on the ganache.
Step 3: Cover the sides and top of the cake with chocolate ganache. Keep it in the freezer for a few minutes before smoothening it. Fill in any gaps left while making it even.
Step 4: Put some chocochips around the base on the sides of the cake.
Step 5: Use a fork to make a check design on the top. Sprinkle some colourful sprikles.
