INGREDIENTS:

250g Cashew-nuts
200g sugar
3 tbsp milk powder
100 ml water
1 tsp cardamom powder
1-2 tsp ghee

METHOD:

Step 1: Take cold, broken cashews and put them in a grinder. Grind the cashews to a fine powder, but do so in pulses to prevent the cashews from leaving oil, making a paste.
Step 2: Take a bowl and sift the cashew powder into it. Grind the larger granules of cashew again till they are a fine powder.
Step 3: Grind the rest of the cashews to a powder along with the milk powder, and sift it into the bowl as well.
Step 4: Prepare sugar syrup by taking a pan and adding sugar to it. Add the water and mix it together on low flame till the sugar dissolves completely.
Step 5: To check if the syrup is ready, take a little bit on a spoon and touch it between two fingers. It would be ready if it starts sticking together.
Step 6: Switch off the flame and add the cardamom powder and the cashew powder into the sugar syrup.
Step 7: Mix it well until it forms a dough like consistency. Then, add 2 tablespoons of ghee and keep mixing it till it comes to room temperature.
Step 8: Evenly roll the dough between two layers of parchment paper, greasing it with ghee. When it is rolled, refrigerate it for 15 minutes.
Step 9: After 15 minutes, cut the rolled dough into classic diamond shaped kaju katlis. If you want, you can put silver vark before cutting. Place the diamonds onto a plate and they are ready to serve! ENJOY!
