INGREDIENTS:
1 + ½ cups all-purpose flour
½ cup almond flour
1 tsp ground cinnamon
½ tsp baking powder
½ tsp salt
3/4 cup softened butter
3/4 cup castor sugar
1 flax egg (1tbsp flax seed powder + 3tbsp water, sitting for 5 minutes)
1 tsp vanilla essence
1 tsp almond essence (optional)
Any jam for filling
3-4 tbsp powdered sugar for dusting
METHOD:
Step 1: To make the flax egg, take water in a bowl and add flax seed powder to it. Stir it and let it sit for 10 minutes.
Step 2: In a large bowl, add the dry ingredients – all-purpose flour, almond flour, salt, baking powder and cinnamon powder. Mix them well and keep them aside.
Step 3: Take another bowl for the wet ingredients. Add in soft butter and beat it till it’s light and fluffy. Then add the castor sugar and beat it again.
Step 4: To this, add the flax egg, almond extract and vanilla extract, and beat it again.
Step 5: Add the dry ingredients to the wet ingredients and beat it to form a dough. Then use a spatula to collect the cookie dough.
Step 6: Divide the dough into two batches, flatten and wrap them in different clinc films. Place them in the refrigerator for 2 hours.
Step 7: After 2 hours in the fridge, the first batch of dough is firm and easy to roll. Roll the dough into an evenly thick size and cut out the cookies using a circle cookie cutter.
Step 8: Pop the first batch of cookies in the pre-heated oven at 180°C for 12 minutes.
Step 9: For the second batch, roll and cut the cookies similar to the first batch but with a star shaped window in the middle of each cookie.
Step 10: Bake the second batch of cookies at 180°C for 10 and a half minutes.
Step 11: Dust powdered sugar on the cookies with windows and spread jam of your choice on the circle cookies.
Step 12: Assemble the cookies by placing the window cookies on top of the circle cookies with jam.
