
INGREDIENTS:
1/2 cup soft butter
1/4 cup castor sugar
1/4 cup brown sugar
1 tsp vanilla essence
1 cup all-purpose flour
1/2 tsp baking soda
1 tbsp cornflour
2-3 tbsp milk
150g cup mascarpone cheese
vanilla extract
3/4 cup confectioners’ sugar
1 tbsp honey
1/3 cup heavy cream
1 tbsp cocoa powder for dusting
METHOD:
Step 1: For the cookies, start by adding butter, brown sugar and castor sugar in a bowl and cream it together.
Step 2: Into this, sift in the flour, baking powder, baking soda and coffee and give it a mix.
Step 3: Add in the milk and combine it using your hand. Place it in the fridge for half an hour.
Step 4: After it has cooled, form equal sized balls and bake them for around 12 minutes at 190 degrees. Once out of the oven, let them cool.
Step 5: To make the cream topping, take mascarpone cheese, icing sugar and honey and whisk it using a stand mixer.
Step 6: Add heavy cream and vanilla. Continue whipping for around 10 mins.
Step 7: Using a piping bag, frost the cookies and dust some cocoa powder. Enjoy!
